Has anybody noticed this? Charizard always looked HUGE in the anime, yet it says in the games that Charizard is like, 5 feet and something inches tall.

Charizard's not the only Pokémon in the anime to suffer from different sizes.
Bulbapedia has a list of Pokémon right here: https://bulbapedia.bulbagarden.net/wiki/Size_discrepancies_in_the_Pokémon_anime

My oppinion on the whole thing is that the size given in the Pokédex is just an avarage height, and that wild and trained Pokémon differ in size (like wild and domestic animals often do). Of course the Anime seems to not always keep the Pokedex' stats in mind. ovo' Dunsparce is one the most significant examples I've seen in the past year. I've seen it drawn very small (about 30 cm), while the Pokedex claims it's 1,5 m.

    ^That
Also, I feel that much of the height issue comes from the fact that in reality...it sort of just wouldn't make sense for many of these Pokemon to be this height.

My favorite Pokemon is Blastoise, which is 5'3. I'm 6'1...I feel a turtle with giant cannons jutting from it's shell should be a little taller than me.

That's quite true. In fact, I noticed that Ash's Charizard kinda shrunk in size throughout each season. When his charmeleon first evolved into charizard, it was hugeee!
